Penne Pasta and Vegetables
This recipe was created and developed by my sister Minda. I have tweaked it slightly to fit my family's taste. I use chicken and add broccoli, she uses sausage. Get creative! This will feed 6 hungry adults. I make a 3/4 portion recipe and we still have leftovers. Delicious!!
Ingredients
1 14.5 oz. box penne pasta (I like Barilla plus, it is in a yellow box and has added protein and Omega-3's. Any extra nutrition I can squeeze in I will!!)
1 large can or 49.5 oz. of chicken broth
2 garlic cloves, minced
1 tablespoon olive oil
1 each red, yellow, green bell peppers, julienned
1 white onion, julienned
1/2 package grilled chicken strips (I buy this at costco, it is a 52 oz package)
or 1 package italian sausage brat-style, pre-cooked (Johnsonville) sliced
or precooked shrimp
or go vegetarian
2 cups heavy cream
2 cups shredded parmesan cheese
Directions
In a large skillet, saute garlic in olive oil.
Add chicken broth and bring to a boil. Add penne pasta.
Cover and simmer until almost all the broth is gone, about 30-45 minutes. At this point I add the vegetables and chicken. You can steam them until the vegetables are tender or just until heated so they are tender-crisp.
Now add the cream and parmesan. Cook until heated through and the sauce gets slightly thick. Enjoy!!
